MASTERCLASSES. At SAUCE, we are all about education and inspiration, and what better way to accomplish this than in the kitchen, learning from the best. Together with our partners Santa Maria and Dieta, Sunday’s programme will offer four different Masterclasses from different internationally renowned chefs. While we can’t spill all the beans quite yet, let’s just say that it will be difficult to choose so we decided to include all four masterclasses into a two-day ticket.

SAUCE NICHE – Tasting Territory

The identity of ingredients make up the great tastes of territory; they are the product of tremendous work, energy, time and patience. SAUCE Niche focuses on the top ingredients, the origins, and the important role of the farmer as a creator of taste. The name of the game is origin.

We believe that every good chef culls from the best possible ingredients available in the creation of their dishes. Chefs, especially young chefs, must become future spokespeople for the ethics and culture of origin of the ingredients.

We want to offer you the possibility to taste and discover flavours of ingredients that are used in the world’s best restaurants. With SAUCE Niche we would like to bring you the knowledge of the producers of these fine ingredients like capers from the island of Pantelleria, Nocciola di Piemonte, Pistacchio Verde di Bronte, Almonds of Val di NOTO and origins of Venezuelan cacao…

SAUCE Niche will take place on Sunday 18.9.

14.00 – 15.00 Producing Pantelleria capers – manual operations and ancient techniques, Gabriele Lasagni, Italy
15.30 – 16.30 A journey through Italian Nuts, Andrea Porta, Italy
17.00 – 18.00 Styles and quality in Chocolate, Chloé Doutre-Roussel, France

Each lesson is 40 minutes with time for questions and, most importantly, tasting.
Product and wine tasting included.

Price: €20 (+VAT) per lesson or €50 (+ VAT) for all three.
Limited seating: 60 pax per session.

WINE HOUSE. Wine plays an important role in SAUCE and our focus is on only small vineyards and artisan wines. There will be family production biodynamic and organic wines available from Italy and France, as well as a few surprises from Slovakia, Bulgaria, and Ukraine.
WINE HOUSE is open to everyone on Sunday 18 and Monday 19 September at Telliskivi.


BARBIE DUDES BBQ DINNER is the ultimate barbeque experience and friendly competition between top chefs cooking with coals and open fire. This BBQ dinner features the “world’s BBQ fair”, showcasing top chefs cooking and using a variation of global grilling techniques. Guests can take part in the cooking too. BARBIE DUDES BBQ is a casual dinner experience including meats, veggies, and music. For an extra fee, crisp ciders, craft brews, and premium wines will be available.
